Ingredients:
- 4 (6-ounce) cod fillets (about 170g each), skin on or off
- 2 tablespoons olive oil (30ml)
- 1 lemon, zested and juiced
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional, for a bit of a kick)
- Salt and freshly ground black pepper to taste
Instructions:
- Preheat the oven to 400°F (200°C).
- In a small bowl, combine olive oil, lemon zest, lemon juice, minced garlic, parsley, dill, oregano, red pepper flakes (if using), salt, and pepper.
- Place the cod fillets in the baking dish. Pour the lemon herb mixture evenly over the cod, ensuring each fillet is well coated.
- Bake in the preheated oven for 15-20 minutes, or until the cod is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
- Garnish with extra fresh parsley and a lemon wedge, if desired. Serve immediately.
