Ingredients:

  • 4 (6-ounce) cod fillets (about 170g each), skin on or off
  • 2 tablespoons olive oil (30ml)
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional, for a bit of a kick)
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, combine olive oil, lemon zest, lemon juice, minced garlic, parsley, dill, oregano, red pepper flakes (if using), salt, and pepper.
  3. Place the cod fillets in the baking dish. Pour the lemon herb mixture evenly over the cod, ensuring each fillet is well coated.
  4. Bake in the preheated oven for 15-20 minutes, or until the cod is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  5. Garnish with extra fresh parsley and a lemon wedge, if desired. Serve immediately.
