Ingredients:
- 4 Wahoo (Ono) fillets (6 oz each)
- 1 tsp fine sea salt
- 0.5 tsp fresh cracked black pepper
- 2 tbsp extra virgin olive oil
- 2 tbsp unsalted butter, melted
- 4 cloves fresh garlic, microplaned
- 2 tbsp fresh lemon juice
- 1 tbsp lemon zest
- 1 tbsp Italian parsley, finely chopped
- 1 pinch smoked paprika
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or prepare an oven-safe cast iron skillet.
- Pat the Wahoo fillets bone-dry using paper towels to ensure a proper sear and prevent steaming. Season both sides of the fillets with salt and pepper.
- In a small bowl, whisk together the olive oil, melted butter, lemon juice, lemon zest, garlic, and smoked paprika until emulsified.
- Place the fillets on the prepared baking sheet and brush or pour the lemon-garlic emulsion generously over each piece.
- Bake for approximately 10 minutes. Use an instant-read thermometer to check the internal temperature; pull the fish at 145°F (63°C).
- Garnish with fresh Italian parsley and allow to rest for 2 minutes before serving to let residual heat finish the cooking process.
