Ingredients:

  • 4 Wahoo (Ono) fillets (6 oz each)
  • 1 tsp fine sea salt
  • 0.5 tsp fresh cracked black pepper
  • 2 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter, melted
  • 4 cloves fresh garlic, microplaned
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tbsp Italian parsley, finely chopped
  • 1 pinch smoked paprika

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or prepare an oven-safe cast iron skillet.
  2. Pat the Wahoo fillets bone-dry using paper towels to ensure a proper sear and prevent steaming. Season both sides of the fillets with salt and pepper.
  3. In a small bowl, whisk together the olive oil, melted butter, lemon juice, lemon zest, garlic, and smoked paprika until emulsified.
  4. Place the fillets on the prepared baking sheet and brush or pour the lemon-garlic emulsion generously over each piece.
  5. Bake for approximately 10 minutes. Use an instant-read thermometer to check the internal temperature; pull the fish at 145°F (63°C).
  6. Garnish with fresh Italian parsley and allow to rest for 2 minutes before serving to let residual heat finish the cooking process.
