Ingredients:

  • 1.5 lbs (680g) Cod fillets, skinless, about 1-inch thick
  • 1/4 cup (60ml) Olive oil
  • 4 cloves Garlic, minced
  • 1/4 cup (60ml) Fresh lemon juice
  • 2 tablespoons (30ml) Lemon zest
  • 1 teaspoon (5ml) Dried oregano
  • 1/2 teaspoon (2.5ml) Salt, plus more to taste
  • 1/4 teaspoon (1.25ml) Black pepper, plus more to taste
  • 1 cup (100g) Panko breadcrumbs
  • 1/4 cup (25g) Fresh parsley, chopped, for garnish (optional)
  • Lemon wedges, for serving

Instructions:

  1. Preheat oven to 400°F (200°C). Line baking sheet with parchment paper (optional).
  2. In a small bowl, combine olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper.
  3. In a separate shallow bowl, add Panko breadcrumbs.
  4. Dip each cod fillet into the garlic lemon oil mixture, ensuring both sides are coated. Then, dredge the cod in the panko breadcrumbs, pressing gently to adhere.
  5. Place the coated cod fillets on the prepared baking sheet. Bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork, and the crust is golden brown. Ensure that the internal temperature of the cod reaches 145°F (63°C).
  6. Garnish with fresh parsley (if using) and serve immediately with lemon wedges.
