Ingredients:
- 1.5 lbs (680g) Cod fillets, skinless, about 1-inch thick
- 1/4 cup (60ml) Olive oil
- 4 cloves Garlic, minced
- 1/4 cup (60ml) Fresh lemon juice
- 2 tablespoons (30ml) Lemon zest
- 1 teaspoon (5ml) Dried oregano
- 1/2 teaspoon (2.5ml) Salt, plus more to taste
- 1/4 teaspoon (1.25ml) Black pepper, plus more to taste
- 1 cup (100g) Panko breadcrumbs
- 1/4 cup (25g) Fresh parsley, chopped, for garnish (optional)
- Lemon wedges, for serving
Instructions:
- Preheat oven to 400°F (200°C). Line baking sheet with parchment paper (optional).
- In a small bowl, combine olive oil, minced garlic, lemon juice, lemon zest, oregano, salt, and pepper.
- In a separate shallow bowl, add Panko breadcrumbs.
- Dip each cod fillet into the garlic lemon oil mixture, ensuring both sides are coated. Then, dredge the cod in the panko breadcrumbs, pressing gently to adhere.
- Place the coated cod fillets on the prepared baking sheet. Bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork, and the crust is golden brown. Ensure that the internal temperature of the cod reaches 145°F (63°C).
- Garnish with fresh parsley (if using) and serve immediately with lemon wedges.
