Ingredients:
- 1 cup (230g) high-quality mayonnaise
- 1 tbsp (15ml) extra virgin olive oil
- 3 cloves garlic (15g), finely minced or pasted
- 1 large lemon (approx. 2 tbsp juice and 6g zest)
- 1 tsp (5g) Dijon mustard
- 0.5 tsp (3g) sea salt
- 0.25 tsp (1g) freshly cracked black pepper
Instructions:
- Grate the garlic cloves using a microplane or mash them with the side of a knife and a pinch of salt until a smooth paste forms to avoid chunky texture.
- In a small mixing bowl, whisk together the garlic paste, lemon juice, lemon zest, and Dijon mustard. Let the mixture sit for 1 minute to mellow the raw garlic flavor.
- Add the mayonnaise and extra virgin olive oil to the bowl. Whisk vigorously until the emulsion is completely smooth, glossy, and pale yellow.
- Fold in the sea salt, cracked black pepper, and optional fresh herbs if using.
- For optimal flavor, cover and refrigerate for at least 30 minutes before serving to allow the aromatics to infuse the fat base.
