Ingredients:

  • 4 cups water
  • 1 lemon, sliced into rounds
  • 1 tsp salt
  • 2 cloves garlic, smashed
  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup celery, finely diced
  • 1/2 cup English cucumber, diced
  • 3 tbsp red onion, minced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup Greek yogurt
  • 2 tbsp light mayonnaise
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Combine water, lemon slices, salt, and smashed garlic in a pot and bring to a gentle boil.
  2. Add shrimp to the boiling liquid and poach for 2–3 minutes until opaque and curled into a 'C' shape.
  3. Drain shrimp into a colander, rinse with ice-cold water to stop cooking, and pat dry with paper towels.
  4. In a large mixing bowl, combine diced celery, cucumber, and red onion.
  5. Add the chilled, patted-dry shrimp and chopped fresh dill to the bowl and stir until evenly distributed.
  6. In a small separate bowl, whisk together Greek yogurt, light mayonnaise, lemon juice, zest, salt, and pepper until smooth.
  7. Pour the dressing over the shrimp mixture and gently fold with a spatula until coated.
