Ingredients:
- 4 cups water
- 1 lemon, sliced into rounds
- 1 tsp salt
- 2 cloves garlic, smashed
- 1 lb large shrimp, peeled and deveined
- 1/2 cup celery, finely diced
- 1/2 cup English cucumber, diced
- 3 tbsp red onion, minced
- 1/4 cup fresh dill, chopped
- 1/4 cup Greek yogurt
- 2 tbsp light mayonnaise
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Combine water, lemon slices, salt, and smashed garlic in a pot and bring to a gentle boil.
- Add shrimp to the boiling liquid and poach for 2–3 minutes until opaque and curled into a 'C' shape.
- Drain shrimp into a colander, rinse with ice-cold water to stop cooking, and pat dry with paper towels.
- In a large mixing bowl, combine diced celery, cucumber, and red onion.
- Add the chilled, patted-dry shrimp and chopped fresh dill to the bowl and stir until evenly distributed.
- In a small separate bowl, whisk together Greek yogurt, light mayonnaise, lemon juice, zest, salt, and pepper until smooth.
- Pour the dressing over the shrimp mixture and gently fold with a spatula until coated.
