Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika
  • 4 tbsp unsalted butter, melted
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, finely chopped
  • 1 lemon, cut into wedges
  • Extra parsley sprigs

Instructions:

  1. In a large bowl, toss the shrimp with olive oil, minced garlic, salt, pepper, and paprika. Ensure every shrimp is well-coated and let sit for 10 minutes at room temperature.
  2. Preheat your grill to medium-high heat. Place shrimp in a single layer and grill for 2–3 minutes per side until they turn opaque and curl into a 'C' shape.
  3. Whisk together the melted butter, lemon juice, and zest. Immediately after removing the shrimp from the grill, transfer them to a warm platter and pour the lemon butter glaze over the top, tossing gently to coat.
