Ingredients:

  • 4 (6 oz) cod fillets
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 4 tbsp unsalted butter, melted
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, finely chopped

Instructions:

  1. Pat the cod fillets completely dry with paper towels. Rub each fillet with olive oil, then season generously with salt and pepper.
  2. Whisk together the melted butter, lemon juice, zest, and minced garlic in a small bowl while the grill preheats to medium-high.
  3. Place the fillets on clean, oiled grates. Press down gently and sear undisturbed for 4–5 minutes until a mahogany-colored crust forms and the fish releases easily.
  4. Flip the fillets carefully using a fish spatula. Immediately brush the seared side generously with the lemon butter glaze.
  5. Cook for another 3–5 minutes until the internal temperature reaches 145°F (63°C) and the flesh flakes easily with a fork.
  6. Remove from heat and let the fillets rest for 10 minutes before serving.
