Ingredients:
- 4 (6 oz) cod fillets
- 1 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 4 tbsp unsalted butter, melted
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, finely chopped
Instructions:
- Pat the cod fillets completely dry with paper towels. Rub each fillet with olive oil, then season generously with salt and pepper.
- Whisk together the melted butter, lemon juice, zest, and minced garlic in a small bowl while the grill preheats to medium-high.
- Place the fillets on clean, oiled grates. Press down gently and sear undisturbed for 4–5 minutes until a mahogany-colored crust forms and the fish releases easily.
- Flip the fillets carefully using a fish spatula. Immediately brush the seared side generously with the lemon butter glaze.
- Cook for another 3–5 minutes until the internal temperature reaches 145°F (63°C) and the flesh flakes easily with a fork.
- Remove from heat and let the fillets rest for 10 minutes before serving.
