Ingredients:
- 2 cans (5 oz / 142g each) tuna, drained well
- 1 large egg
- 1/4 cup superfine almond flour
- 1/4 cup mayonnaise
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 2 tbsp fresh parsley, finely chopped
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions:
- In a medium bowl, flake the drained tuna with a fork until no large clumps remain. Add the egg, mayonnaise, almond flour, lemon juice, zest, and all seasonings. Fold the mixture gently with a spatula until the ingredients are just combined and the moisture is evenly distributed.
- Scoop approximately 2 tablespoons of the mixture and roll it into a ball. Gently press it down into a disc about 1/2 inch (1.3cm) thick—roughly the size of your palm.
- Preheat your air fryer to 400°F (200°C). Place the patties in the basket in a single layer, leaving at least 1/2 inch of space between each to allow the air to circulate. Cook for 8 minutes, or until the edges are mahogany-colored and the patties feel firm to the touch.
