Ingredients:

  • 1.5 lbs Fresh Haddock Fillets
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1 tsp Fresh Lemon Zest
  • 1/2 tsp Sea Salt
  • 1/4 tsp Cracked Black Pepper
  • 1 tbsp Fresh Parsley, finely chopped
  • 2 tbsp Salted Butter, melted
  • 1 Fresh Lemon, cut into wedges

Instructions:

  1. Preheat your grill to medium-high heat (approximately 400°F / 204°C). Ensure the grates are clean.
  2. Pat the haddock fillets bone-dry on both sides using paper towels to ensure a proper sear.
  3. In a small bowl, combine smoked paprika, garlic powder, onion powder, lemon zest, salt, and pepper. Brush the fish with olive oil and apply the herb rub evenly.
  4. Wipe the hot grill grates with an oil-soaked paper towel using tongs to create a non-stick surface.
  5. Place the haddock on the grill. Use the 70/30 rule: cook undisturbed for 6–7 minutes until it naturally releases from the grate.
  6. Gently flip the fillets and cook for another 2–3 minutes until the internal temperature reaches 145°F (63°C).
  7. Remove from heat and rest for 2 minutes. Drizzle with melted butter and garnish with fresh parsley and lemon wedges.
