Ingredients:
- 1.5 lbs Fresh Haddock Fillets
- 2 tbsp Extra Virgin Olive Oil
- 1 tsp Smoked Paprika
- 1 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1 tsp Fresh Lemon Zest
- 1/2 tsp Sea Salt
- 1/4 tsp Cracked Black Pepper
- 1 tbsp Fresh Parsley, finely chopped
- 2 tbsp Salted Butter, melted
- 1 Fresh Lemon, cut into wedges
Instructions:
- Preheat your grill to medium-high heat (approximately 400°F / 204°C). Ensure the grates are clean.
- Pat the haddock fillets bone-dry on both sides using paper towels to ensure a proper sear.
- In a small bowl, combine smoked paprika, garlic powder, onion powder, lemon zest, salt, and pepper. Brush the fish with olive oil and apply the herb rub evenly.
- Wipe the hot grill grates with an oil-soaked paper towel using tongs to create a non-stick surface.
- Place the haddock on the grill. Use the 70/30 rule: cook undisturbed for 6–7 minutes until it naturally releases from the grate.
- Gently flip the fillets and cook for another 2–3 minutes until the internal temperature reaches 145°F (63°C).
- Remove from heat and rest for 2 minutes. Drizzle with melted butter and garnish with fresh parsley and lemon wedges.
