Ingredients:

  • 2 tablespoons olive oil (30 ml)
  • 2 tablespoons soy sauce (30 ml)
  • 2 tablespoons lime juice, freshly squeezed (30 ml)
  • 2 tablespoons brown sugar, packed (30 g)
  • 2 tablespoons Jerk seasoning (20 g)
  • 1 teaspoon ground allspice (5 ml)
  • 1/2 teaspoon ground cinnamon (2.5 ml)
  • 1/4 teaspoon cayenne pepper (1.25 ml)
  • 2 cloves garlic, minced (approximately 6 g)
  • 1 green onion, finely chopped (approximately 15 g)
  • 1.5 pounds large shrimp, peeled and deveined (700g)
  • 1 large pineapple, peeled, cored, and cut into 1-inch chunks (approx. 900g yield)
  • Wooden or metal skewers

Instructions:

  1. In a mixing bowl, whisk together olive oil, soy sauce, lime juice, brown sugar, Jerk seasoning, allspice, cinnamon, cayenne pepper, garlic, and green onion.
  2. Add the shrimp to the marinade. Toss to coat evenly. Cover and refrigerate for at least 30 minutes.
  3. Thread the marinated shrimp and pineapple chunks onto skewers, alternating between the two. Aim for about 4-5 shrimp and 4-5 pineapple pieces per skewer.
  4. Preheat grill to medium-high heat (around 375-400°F or 190-205°C). Lightly oil the grill grates or pan.
  5. Place skewers on the preheated grill. Cook for about 3-4 minutes per side, or until the shrimp is pink and opaque and the pineapple is slightly caramelized.
