Ingredients:
- 2 tablespoons olive oil (30 ml)
- 2 tablespoons soy sauce (30 ml)
- 2 tablespoons lime juice, freshly squeezed (30 ml)
- 2 tablespoons brown sugar, packed (30 g)
- 2 tablespoons Jerk seasoning (20 g)
- 1 teaspoon ground allspice (5 ml)
- 1/2 teaspoon ground cinnamon (2.5 ml)
- 1/4 teaspoon cayenne pepper (1.25 ml)
- 2 cloves garlic, minced (approximately 6 g)
- 1 green onion, finely chopped (approximately 15 g)
- 1.5 pounds large shrimp, peeled and deveined (700g)
- 1 large pineapple, peeled, cored, and cut into 1-inch chunks (approx. 900g yield)
- Wooden or metal skewers
Instructions:
- In a mixing bowl, whisk together olive oil, soy sauce, lime juice, brown sugar, Jerk seasoning, allspice, cinnamon, cayenne pepper, garlic, and green onion.
- Add the shrimp to the marinade. Toss to coat evenly. Cover and refrigerate for at least 30 minutes.
- Thread the marinated shrimp and pineapple chunks onto skewers, alternating between the two. Aim for about 4-5 shrimp and 4-5 pineapple pieces per skewer.
- Preheat grill to medium-high heat (around 375-400°F or 190-205°C). Lightly oil the grill grates or pan.
- Place skewers on the preheated grill. Cook for about 3-4 minutes per side, or until the shrimp is pink and opaque and the pineapple is slightly caramelized.
