Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon yeast
- 3/4 cup warm water
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup ricotta cheese
- 1 cup pizza sauce
- 1 to 2 cups assorted toppings (pepperoni, bell peppers, mushrooms, etc.)
- 1 cup additional shredded mozzarella cheese for topping
- 1 teaspoon Italian seasoning (optional)
Instructions:
- In a mixing bowl, dissolve yeast and sugar in warm water. Let it sit until bubbly (about 5 minutes).
- Add flour, salt, and olive oil; mix until a dough forms.
- Knead on a floured surface for about 5 minutes until smooth.
- Place dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for 1 hour or until doubled in size.
- In a bowl, combine mozzarella and ricotta cheese; set aside.
- Preheat oven to 475°F (245°C). Roll out the dough into a large circle, about 12–14 inches in diameter.
- Place on a greased baking sheet or parchment-lined pizza stone.
- Create a border around the edge, placing the cheese mixture around the outer rim. Fold dough over to encase the cheese, sealing tightly.
- Spread pizza sauce over the center, top with desired toppings and sprinkle additional cheese.
- Bake in the preheated oven for 25-30 minutes or until crust is golden and cheese is bubbly.
- Allow the pizza to rest for 5 minutes, then slice and serve hot.
