Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon yeast
  • 3/4 cup warm water
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup ricotta cheese
  • 1 cup pizza sauce
  • 1 to 2 cups assorted toppings (pepperoni, bell peppers, mushrooms, etc.)
  • 1 cup additional shredded mozzarella cheese for topping
  • 1 teaspoon Italian seasoning (optional)

Instructions:

  1. In a mixing bowl, dissolve yeast and sugar in warm water. Let it sit until bubbly (about 5 minutes).
  2. Add flour, salt, and olive oil; mix until a dough forms.
  3. Knead on a floured surface for about 5 minutes until smooth.
  4. Place dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for 1 hour or until doubled in size.
  5. In a bowl, combine mozzarella and ricotta cheese; set aside.
  6. Preheat oven to 475°F (245°C). Roll out the dough into a large circle, about 12–14 inches in diameter.
  7. Place on a greased baking sheet or parchment-lined pizza stone.
  8. Create a border around the edge, placing the cheese mixture around the outer rim. Fold dough over to encase the cheese, sealing tightly.
  9. Spread pizza sauce over the center, top with desired toppings and sprinkle additional cheese.
  10. Bake in the preheated oven for 25-30 minutes or until crust is golden and cheese is bubbly.
  11. Allow the pizza to rest for 5 minutes, then slice and serve hot.
