Ingredients:

  • 1.5 lbs (680g) Cod fillets, skinless
  • 1/4 cup (60ml) Honey
  • 2 tbsp (30ml) Soy sauce, low sodium
  • 2 tbsp (30ml) Olive oil
  • 2 cloves Garlic, minced
  • 1 tbsp Lemon juice, fresh
  • 1/2 tsp Ginger, grated (or 1/4 tsp ground ginger)
  • 1/4 tsp Red pepper flakes (optional)
  • Salt and Black Pepper to taste
  • Fresh parsley, chopped (optional)
  • Sesame seeds (optional)

Instructions:

  1. Whisk together honey, soy sauce, olive oil, minced garlic, lemon juice, ginger, and red pepper flakes (if using) in a small bowl. Season with salt and pepper.
  2. Place the cod fillets in the baking dish. Pour the honey-garlic marinade evenly over the fish, ensuring each fillet is well coated.
  3. Bake in a preheated oven at 400°F (200°C) for 12-15 minutes, or until the cod is opaque and flakes easily with a fork. Ensure the internal temperature reaches 145°F (63°C).
  4. Remove the baking dish from the oven. Garnish with fresh parsley and sesame seeds, if desired. Serve immediately.
