Ingredients:
- 3 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 2 cloves garlic, minced fine
- 1 tsp dried oregano
- 1 tsp fresh parsley, chopped
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 4 (6 oz) tilapia fillets
Instructions:
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, parsley, salt, and pepper until fully emulsified into a thick slurry.
- Pat each tilapia fillet with paper towels until the surface is completely dry. Brush the herb olive oil marinade generously over both sides of the fish and let sit for 5 minutes at room temperature.
- Heat a cast iron skillet or heavy-bottomed non-stick pan over medium-high heat until shimmering but not smoking.
- Carefully lay the fillets in the pan and press down lightly with a spatula for 5 seconds to ensure full contact.
- Sear for 3-4 minutes per side without moving them, until they develop a mahogany-colored crust and flake easily with a fork.
