Ingredients:

  • 3 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 2 cloves garlic, minced fine
  • 1 tsp dried oregano
  • 1 tsp fresh parsley, chopped
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 4 (6 oz) tilapia fillets

Instructions:

  1. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, parsley, salt, and pepper until fully emulsified into a thick slurry.
  2. Pat each tilapia fillet with paper towels until the surface is completely dry. Brush the herb olive oil marinade generously over both sides of the fish and let sit for 5 minutes at room temperature.
  3. Heat a cast iron skillet or heavy-bottomed non-stick pan over medium-high heat until shimmering but not smoking.
  4. Carefully lay the fillets in the pan and press down lightly with a spatula for 5 seconds to ensure full contact.
  5. Sear for 3-4 minutes per side without moving them, until they develop a mahogany-colored crust and flake easily with a fork.
