Ingredients:

  • 2 whole branzino fish, cleaned (approximately 1 pound each or 450 grams)
  • 4 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh dill, finely chopped
  • Salt and freshly ground black pepper, to taste
  • Lemon wedges and fresh herbs for serving

Instructions:

  1. Rinse the branzino under cold water and pat dry with paper towels. Make three diagonal slashes on each side of the fish to help it cook evenly.
  2. In a mixing bowl, combine olive oil, lemon juice, lemon zest, parsley, thyme, dill, salt, and pepper.
  3. Rub the marinade inside and outside of the fish, ensuring the slashes are filled with herbs. Cover and refrigerate for at least 30 minutes.
  4. Heat the grill to medium-high heat (about 400°F or 200°C).
  5. Place the fish on the grill and cook for 5-6 minutes on each side, or until the flesh is opaque and flakes easily with a fork.
  6. Carefully transfer the grilled branzino to a serving platter. Garnish with lemon wedges and fresh herbs before serving.
