Ingredients:
- 2 whole branzino fish, cleaned (approximately 1 pound each or 450 grams)
- 4 tablespoons olive oil
- 1 lemon, zested and juiced
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh dill, finely chopped
- Salt and freshly ground black pepper, to taste
- Lemon wedges and fresh herbs for serving
Instructions:
- Rinse the branzino under cold water and pat dry with paper towels. Make three diagonal slashes on each side of the fish to help it cook evenly.
- In a mixing bowl, combine olive oil, lemon juice, lemon zest, parsley, thyme, dill, salt, and pepper.
- Rub the marinade inside and outside of the fish, ensuring the slashes are filled with herbs. Cover and refrigerate for at least 30 minutes.
- Heat the grill to medium-high heat (about 400°F or 200°C).
- Place the fish on the grill and cook for 5-6 minutes on each side, or until the flesh is opaque and flakes easily with a fork.
- Carefully transfer the grilled branzino to a serving platter. Garnish with lemon wedges and fresh herbs before serving.
