Ingredients:

  • 4 sea bream fillets (about 6 ounces each, skin-on recommended)
  • 1 cup fresh breadcrumbs
  • ¼ cup fresh parsley, finely chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • ½ cup unsalted butter
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • Salt to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine breadcrumbs, parsley, thyme, olive oil, salt, and pepper.
  3. Pat sea bream fillets dry and season both sides with salt and pepper.
  4. Press the herb mixture evenly onto the skin side of each fillet.
  5. Place the fillets on a baking sheet lined with parchment paper and bake for about 10-12 minutes, or until the crust is golden brown and the fish flakes easily with a fork.
  6. In a small saucepan, melt the butter over low heat. Stir in lemon juice, lemon zest, and add salt to taste; keep warm.
  7. Transfer the baked sea bream to plates and drizzle with lemon butter sauce.
