Ingredients:

  • 4 (6-ounce) halibut fillets (170g each)
  • 1 cup panko breadcrumbs (100g)
  • 2 tablespoons fresh parsley, finely chopped (30g)
  • 1 tablespoon fresh dill, finely chopped (15g)
  • 1 teaspoon garlic powder (3g)
  • ½ teaspoon salt (3g)
  • ¼ teaspoon black pepper (1g)
  • 2 tablespoons olive oil (30ml)
  • ½ cup unsalted butter (113g)
  • 2 tablespoons fresh lemon juice (30ml)
  • Zest of 1 lemon
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the herb crust by mixing panko breadcrumbs, parsley, dill, garlic powder, salt, and pepper in a bowl.
  3. Drizzle olive oil over the breadcrumb mixture and stir until evenly coated.
  4. Place halibut fillets on a lined baking sheet and evenly distribute the herb crust atop each fillet.
  5. Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork and crust is golden brown.
  6. While the fish is baking, make the Lemon Butter Sauce: melt butter in a saucepan over low heat.
  7. Once melted, whisk in lemon juice, zest, salt, and pepper to taste.
  8. Serve the halibut with a drizzle of the lemon butter sauce over the top.
