Ingredients:
- 4 (6-ounce) halibut fillets (170g each)
- 1 cup panko breadcrumbs (100g)
- 2 tablespoons fresh parsley, finely chopped (30g)
- 1 tablespoon fresh dill, finely chopped (15g)
- 1 teaspoon garlic powder (3g)
- ½ teaspoon salt (3g)
- ¼ teaspoon black pepper (1g)
- 2 tablespoons olive oil (30ml)
- ½ cup unsalted butter (113g)
- 2 tablespoons fresh lemon juice (30ml)
- Zest of 1 lemon
- Salt and pepper, to taste
Instructions:
- Preheat your oven to 400°F (200°C).
- Prepare the herb crust by mixing panko breadcrumbs, parsley, dill, garlic powder, salt, and pepper in a bowl.
- Drizzle olive oil over the breadcrumb mixture and stir until evenly coated.
- Place halibut fillets on a lined baking sheet and evenly distribute the herb crust atop each fillet.
- Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork and crust is golden brown.
- While the fish is baking, make the Lemon Butter Sauce: melt butter in a saucepan over low heat.
- Once melted, whisk in lemon juice, zest, salt, and pepper to taste.
- Serve the halibut with a drizzle of the lemon butter sauce over the top.
