Ingredients:

  • 4 haddock fillets (about 6 ounces each, fresh or thawed)
  • 1 tablespoon olive oil (15 ml)
  • ½ teaspoon salt (3 g)
  • ¼ teaspoon black pepper (1 g)
  • ½ cup breadcrumbs (50 g)
  • 2 tablespoons fresh parsley, finely chopped (30 g)
  • 1 tablespoon fresh dill, finely chopped (15 g)
  • 2 garlic cloves, minced
  • 3 tablespoons melted butter (45 g)
  • ¼ cup unsalted butter (60 g)
  • 1 tablespoon fresh lemon juice (15 ml)
  • 1 teaspoon lemon zest (grated)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
  3. Lay the haddock fillets in the dish and season with salt and pepper.
  4. In a bowl, combine breadcrumbs, parsley, dill, minced garlic, and melted butter. Mix until crumbly.
  5. Evenly spread the herb crust over each fillet.
  6. Place in the oven and bake for 15-20 minutes or until the fish flakes easily with a fork.
  7. While the fish is baking, melt the butter in a small saucepan and stir in lemon juice and zest.
  8. Drizzle lemon butter sauce over the fish before serving.
