Ingredients:
- 4 haddock fillets (about 6 ounces each, fresh or thawed)
- 1 tablespoon olive oil (15 ml)
- ½ teaspoon salt (3 g)
- ¼ teaspoon black pepper (1 g)
- ½ cup breadcrumbs (50 g)
- 2 tablespoons fresh parsley, finely chopped (30 g)
- 1 tablespoon fresh dill, finely chopped (15 g)
- 2 garlic cloves, minced
- 3 tablespoons melted butter (45 g)
- ¼ cup unsalted butter (60 g)
- 1 tablespoon fresh lemon juice (15 ml)
- 1 teaspoon lemon zest (grated)
Instructions:
- Preheat oven to 400°F (200°C).
- Lightly grease a baking dish with olive oil.
- Lay the haddock fillets in the dish and season with salt and pepper.
- In a bowl, combine breadcrumbs, parsley, dill, minced garlic, and melted butter. Mix until crumbly.
- Evenly spread the herb crust over each fillet.
- Place in the oven and bake for 15-20 minutes or until the fish flakes easily with a fork.
- While the fish is baking, melt the butter in a small saucepan and stir in lemon juice and zest.
- Drizzle lemon butter sauce over the fish before serving.
