Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound ground beef or turkey
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 medium bell peppers, chopped
- 2 medium tomatoes, diced
- 4 cups beef or vegetable broth
- 1 cup uncooked white rice
- Fresh parsley or basil, chopped (optional)
Instructions:
- Heat olive oil over medium heat in a large pot. Add diced onion and cook until translucent, about 3-4 minutes.
- Stir in minced garlic and sauté for another 30 seconds until fragrant.
- Add ground beef (or turkey) to the pot. Break it up with a spoon, cooking until browned and fully cooked, about 5-7 minutes. Drain excess fat if needed.
- Stir in Italian seasoning, salt, and black pepper.
- Add chopped bell peppers and diced tomatoes to the pot. Cook for 3-4 minutes until they begin to soften.
- Pour in the broth and bring the mixture to a boil.
- Stir in uncooked rice. Reduce heat to a simmer and cover. Cook for 15 minutes or until the rice is tender.
- Taste and adjust seasoning if necessary.
- Ladle soup into bowls and garnish with fresh herbs if desired.
