Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef or turkey
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 medium bell peppers, chopped
  • 2 medium tomatoes, diced
  • 4 cups beef or vegetable broth
  • 1 cup uncooked white rice
  • Fresh parsley or basil, chopped (optional)

Instructions:

  1. Heat olive oil over medium heat in a large pot. Add diced onion and cook until translucent, about 3-4 minutes.
  2. Stir in minced garlic and sauté for another 30 seconds until fragrant.
  3. Add ground beef (or turkey) to the pot. Break it up with a spoon, cooking until browned and fully cooked, about 5-7 minutes. Drain excess fat if needed.
  4. Stir in Italian seasoning, salt, and black pepper.
  5. Add chopped bell peppers and diced tomatoes to the pot. Cook for 3-4 minutes until they begin to soften.
  6. Pour in the broth and bring the mixture to a boil.
  7. Stir in uncooked rice. Reduce heat to a simmer and cover. Cook for 15 minutes or until the rice is tender.
  8. Taste and adjust seasoning if necessary.
  9. Ladle soup into bowls and garnish with fresh herbs if desired.
