Ingredients:
- 2 cups dried navy beans
- 4 cups water
- 6 oz bacon, diced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup barbecue sauce
- 1/4 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp Worcestershire sauce
- 1 tsp mustard powder
- 1/2 tsp smoked paprika
- 1/2 tsp chili powder
- Salt and pepper, to taste
Instructions:
- Rinse and soak the navy beans in water overnight (or use quick-soak method). Drain the beans, place in a large pot, cover with 4 cups of water, and bring to a boil. Simmer for about 30 minutes until tender but not mushy. Drain and set aside.
- In a skillet, cook the diced bacon over medium heat until crispy. Add chopped onion and sauté until translucent (about 5 minutes). Stir in minced garlic and cook for another minute.
- In the baking dish, combine the drained beans with the bacon mixture, barbecue sauce, ketchup, brown sugar, Worcestershire sauce, mustard powder, smoked paprika, and chili powder. Season with salt and pepper to taste.
- Preheat the oven to 350°F (175°C). Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until bubbly and slightly caramelized on top.
- Let the beans cool slightly before serving. Enjoy them warm!
