Ingredients:
- 1 lb raw medium shrimp, peeled and deveined
- 1 tsp salt
- 1 tbsp lemon juice
- 2 cups water
- 3 stalks celery, finely diced
- 1/4 cup red onion, minced
- 2 tbsp fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1/2 cup plain Greek yogurt
- 2 tbsp light mayonnaise
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions:
- Bring water, salt, and lemon juice to a gentle simmer. Add shrimp and cook for 2–3 minutes until they are opaque and pearly white.
- Immediately transfer shrimp to a fine-mesh strainer and rinse with ice-cold water to stop the cooking process. Pat dry with paper towels.
- In a small bowl, combine Greek yogurt, mayonnaise, lemon juice, zest, mustard, garlic powder, salt, and pepper. Whisk vigorously until smooth.
- In a large mixing bowl, combine the chilled shrimp, diced celery, minced onion, parsley, and dill.
- Pour the dressing over the shrimp mixture and gently fold with a spatula until combined.
