Ingredients:
- 2 (5 oz) cans tuna in water, thoroughly drained
- 1 large egg
- 1/4 cup plain Greek yogurt
- 1 tbsp fresh lemon juice
- 2 tbsp fresh parsley, finely chopped
- 1/2 cup almond flour
- 1/2 tsp garlic powder
- 1/4 tsp sea salt
- 1/4 tsp cracked black pepper
- 1 tbsp avocado oil
Instructions:
- Combine the drained tuna, egg, Greek yogurt, lemon juice, and parsley in a large mixing bowl. Use a fork to flake the tuna and stir until the mixture is cohesive.
- Fold in the almond flour, garlic powder, salt, and pepper. Stir until just combined; avoid overworking the mixture to ensure the patties remain light.
- Line a baking sheet with parchment paper. Scoop approximately 2 tablespoons of the mixture per patty and shape into discs roughly 1 inch thick, spacing them 1 inch apart.
- Preheat oven to 400°F (200°C). Lightly brush the top of each patty with avocado oil and bake for 12–15 minutes until the edges are firm and tops are golden-brown.
