Ingredients:

  • 2 cans (5 oz / 142 g each) canned tuna in water, drained thoroughly
  • 1 large egg, beaten
  • 1/4 cup (30 g) almond flour
  • 2 tbsp (15 g) fresh parsley, finely chopped
  • 1/4 cup (40 g) red onion, minced
  • 1 tbsp (15 ml) lemon juice
  • 1 tsp (2 g) lemon zest
  • 1/2 tsp (3 g) garlic powder
  • 1/2 tsp (3 g) sea salt
  • 1/4 tsp (1 g) black pepper

Instructions:

  1. In a large mixing bowl, flake the drained tuna with a fork until no large chunks remain.
  2. Stir in the minced onion, parsley, lemon juice, zest, garlic powder, salt, and pepper until aromatics are evenly distributed.
  3. Add the beaten egg and almond flour to the mixture, stirring until the dough is tacky and holds its shape.
  4. Scoop approximately 1/3 cup (80 ml) of the mixture per patty and shape into discs about 1 inch (2.5 cm) thick.
  5. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  6. Place patties on the baking sheet spaced 2 inches apart and bake for 7–8 minutes.
  7. Carefully flip the patties with a spatula and bake for another 7 minutes until edges are golden-brown and the crust is firm.
