Ingredients:
- 2 cans (5 oz / 142 g each) canned tuna in water, drained thoroughly
- 1 large egg, beaten
- 1/4 cup (30 g) almond flour
- 2 tbsp (15 g) fresh parsley, finely chopped
- 1/4 cup (40 g) red onion, minced
- 1 tbsp (15 ml) lemon juice
- 1 tsp (2 g) lemon zest
- 1/2 tsp (3 g) garlic powder
- 1/2 tsp (3 g) sea salt
- 1/4 tsp (1 g) black pepper
Instructions:
- In a large mixing bowl, flake the drained tuna with a fork until no large chunks remain.
- Stir in the minced onion, parsley, lemon juice, zest, garlic powder, salt, and pepper until aromatics are evenly distributed.
- Add the beaten egg and almond flour to the mixture, stirring until the dough is tacky and holds its shape.
- Scoop approximately 1/3 cup (80 ml) of the mixture per patty and shape into discs about 1 inch (2.5 cm) thick.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place patties on the baking sheet spaced 2 inches apart and bake for 7–8 minutes.
- Carefully flip the patties with a spatula and bake for another 7 minutes until edges are golden-brown and the crust is firm.
