Ingredients:

  • 3 cups cooked jasmine rice
  • 1 cup diced ham
  • 1 cup fresh pineapple, diced
  • 1 cup frozen peas and carrots
  • 2 green onions, chopped
  • 2 large eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1/2 teaspoon black pepper

Instructions:

  1. Cook the rice according to package instructions and let it cool.
  2. Heat a splash of sesame oil in the frying pan. Whisk the eggs in a bowl; pour into the pan, and cook until scrambled, then set aside.
  3. In the same pan, add the remaining sesame oil. Add garlic and sauté until fragrant (about 30 seconds). Toss in the peas and carrots; cook for 2-3 minutes until heated through.
  4. Add the cooked rice, ham, and pineapple to the pan. Stir to combine, ensuring everything is evenly distributed.
  5. Pour the soy sauce over the rice mixture and add black pepper. Stir-fry for an additional 2-3 minutes until everything is heated through.
  6. Fold in scrambled eggs and green onions. Optionally garnish with additional green onions and sesame seeds.
