Ingredients:
- 3 cups cooked jasmine rice
- 1 cup diced ham
- 1 cup fresh pineapple, diced
- 1 cup frozen peas and carrots
- 2 green onions, chopped
- 2 large eggs
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 clove garlic, minced
- 1/2 teaspoon black pepper
Instructions:
- Cook the rice according to package instructions and let it cool.
- Heat a splash of sesame oil in the frying pan. Whisk the eggs in a bowl; pour into the pan, and cook until scrambled, then set aside.
- In the same pan, add the remaining sesame oil. Add garlic and sauté until fragrant (about 30 seconds). Toss in the peas and carrots; cook for 2-3 minutes until heated through.
- Add the cooked rice, ham, and pineapple to the pan. Stir to combine, ensuring everything is evenly distributed.
- Pour the soy sauce over the rice mixture and add black pepper. Stir-fry for an additional 2-3 minutes until everything is heated through.
- Fold in scrambled eggs and green onions. Optionally garnish with additional green onions and sesame seeds.
