Ingredients:

  • 1/4 cup extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 4 (6 oz) Ahi or Yellowfin tuna steaks
  • 1 tbsp high-smoke point oil

Instructions:

  1. Whisk the olive oil, minced garlic, lemon juice, oregano, salt, and pepper in a small bowl until emulsified. Pat the tuna steaks completely dry with paper towels. Coat the steaks generously in the marinade and let them sit at room temperature for 10–15 minutes.
  2. Preheat your grill or grill pan to high heat until a drop of water evaporates instantly. Lightly brush the grill grates with high-smoke point oil. Place the tuna steaks on the grill and sear for 2–3 minutes per side for a medium-rare center.
  3. Remove the steaks from the heat immediately. Transfer them to a warm plate and let them rest for 5 minutes to allow juices to redistribute.
