Ingredients:
- 1 lb large shrimp, peeled and deveined
- 3 tbsp unsalted butter, melted
- 1 cup zucchini, diced into 1/2 inch rounds
- 1 cup bell pepper, chopped
- 1 cup corn kernels
- 1 tbsp lemon juice, fresh
- 3 cloves garlic, minced
- 1 tsp Old Bay seasoning
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1 tbsp fresh parsley, chopped
Instructions:
- In a large mixing bowl, combine the shrimp, zucchini, bell peppers, and corn.
- Pour the melted butter and lemon juice over the mixture.
- Stir in the minced garlic, Old Bay seasoning, salt, and pepper. Toss gently until every shrimp is coated.
- Tear two large sheets of heavy-duty foil (approx. 12x18 inches) and divide the shrimp and vegetable mixture evenly between the two sheets.
- Bring the two long sides of the foil together and fold them over twice to create a secure seam, then fold the ends inward and tuck them tightly.
- Preheat your grill to 400°F (204°C).
- Place the packets directly on the grill grates and grill for 8 minutes without opening the packets.
- Remove from grill and garnish with fresh parsley and an extra squeeze of lemon.
