Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp unsalted butter, melted
  • 1 cup zucchini, diced into 1/2 inch rounds
  • 1 cup bell pepper, chopped
  • 1 cup corn kernels
  • 1 tbsp lemon juice, fresh
  • 3 cloves garlic, minced
  • 1 tsp Old Bay seasoning
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. In a large mixing bowl, combine the shrimp, zucchini, bell peppers, and corn.
  2. Pour the melted butter and lemon juice over the mixture.
  3. Stir in the minced garlic, Old Bay seasoning, salt, and pepper. Toss gently until every shrimp is coated.
  4. Tear two large sheets of heavy-duty foil (approx. 12x18 inches) and divide the shrimp and vegetable mixture evenly between the two sheets.
  5. Bring the two long sides of the foil together and fold them over twice to create a secure seam, then fold the ends inward and tuck them tightly.
  6. Preheat your grill to 400°F (204°C).
  7. Place the packets directly on the grill grates and grill for 8 minutes without opening the packets.
  8. Remove from grill and garnish with fresh parsley and an extra squeeze of lemon.
