Ingredients:

  • 2 whole sea bream, cleaned and scaled (about 1 lb each)
  • 2 tablespoons olive oil
  • 2 lemons (1 sliced into rounds, 1 juiced)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste

Instructions:

  1. Rinse the sea bream under cold water and pat dry with paper towels.
  2. Make three diagonal cuts on each side of the fish to help it cook evenly.
  3. In a small bowl, combine olive oil, lemon juice, minced garlic, parsley, thyme, salt, and pepper.
  4. Rub this marinade generously over both sides of the fish as well as inside the cavity.
  5. Let marinate for at least 30 minutes at room temperature or up to an hour in the refrigerator.
  6. Preheat your grill to medium-high heat (about 400°F /200°C).
  7. Place lemon slices inside the cavities of each fish.
  8. Lightly oil the grill grates or use non-stick spray to prevent sticking.
  9. Carefully place the marinated fish on the grill.
  10. Grill for about 6–8 minutes per side, depending on thickness; use a spatula to flip carefully.
  11. The fish is done when it flakes easily with a fork and has an internal temperature of at least 145°F (63°C).
