Ingredients:
- 2 whole sea bass (about 1 to 1.5 pounds each), cleaned and scaled
- 2 tablespoons olive oil
- Salt and pepper to taste
- Lemon slices (for garnish)
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 3 cloves garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon
Instructions:
- In a small bowl, combine chopped parsley, basil, minced garlic, lemon zest, lemon juice, salt, and pepper. Mix well until all ingredients are combined.
- Preheat your grill to medium-high heat (about 375°F to 400°F).
- Rinse the sea bass under cold water and pat dry with paper towels.
- Score each side of the fish with three diagonal cuts about an inch apart; this helps cook evenly.
- Rub olive oil over both sides of each fish.
- Generously season inside the cavity as well as outside with salt and pepper.
- Spread half of the herb marinade inside each cavity of the fish.
- Allow it to marinate for about 15–30 minutes at room temperature while you preheat your grill.
- Once ready to grill, place fish on a clean oiled grill grate.
- Cook for 6–8 minutes on one side without moving them until you see nice char marks.
- Carefully flip using a fish spatula or grilling basket; cook for another 6–8 minutes on the other side until cooked through (the flesh should flake easily when tested with a fork).
- Remove from grill; drizzle remaining herb marinade over grilled sea bass.
- Garnish with fresh lemon slices before serving.
