Ingredients:

  • 2 whole sea bass (about 1 to 1.5 pounds each), cleaned and scaled
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Lemon slices (for garnish)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 3 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions:

  1. In a small bowl, combine chopped parsley, basil, minced garlic, lemon zest, lemon juice, salt, and pepper. Mix well until all ingredients are combined.
  2. Preheat your grill to medium-high heat (about 375°F to 400°F).
  3. Rinse the sea bass under cold water and pat dry with paper towels.
  4. Score each side of the fish with three diagonal cuts about an inch apart; this helps cook evenly.
  5. Rub olive oil over both sides of each fish.
  6. Generously season inside the cavity as well as outside with salt and pepper.
  7. Spread half of the herb marinade inside each cavity of the fish.
  8. Allow it to marinate for about 15–30 minutes at room temperature while you preheat your grill.
  9. Once ready to grill, place fish on a clean oiled grill grate.
  10. Cook for 6–8 minutes on one side without moving them until you see nice char marks.
  11. Carefully flip using a fish spatula or grilling basket; cook for another 6–8 minutes on the other side until cooked through (the flesh should flake easily when tested with a fork).
  12. Remove from grill; drizzle remaining herb marinade over grilled sea bass.
  13. Garnish with fresh lemon slices before serving.
