Ingredients:
- 2 whole sea bass (cleaned and scaled)
- 4 tablespoons olive oil
- 2 lemons (zested and juiced)
- 3 cloves garlic (minced)
- 1 tablespoon fresh parsley (chopped)
- 1 teaspoon salt
- ½ teaspoon black pepper
- Fresh herbs (thyme or rosemary, optional)
Instructions:
- [Step 1: Prepare the Marinade] In a large bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, chopped parsley, salt, and black pepper. Reserve half of the marinade for basting later.
- [Step 2: Marinate the Sea Bass] Place the cleaned sea bass in the bowl with the marinade. Ensure each fish is well-coated inside and out. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- [Step 3: Preheat the Grill] Preheat your grill to medium-high heat. If using charcoal, ensure coals are glowing ash white; if using gas, preheat with all burners on high.
- [Step 4: Grill the Sea Bass] Lightly oil the grill grates to prevent sticking. Remove sea bass from marinade; discard used marinade. Place fish on the grill diagonally across grates. Cook for about 6–8 minutes per side or until flesh is opaque and flakes easily with a fork. Use reserved marinade to baste while grilling for added moisture and flavor.
- [Step5: Serve] Carefully remove fish from grill using a fish spatula. Garnish with fresh herbs if desired; serve immediately with additional lemon wedges on the side.
