Ingredients:

  • 4 salmon fillets
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp lemon juice
  • 2 tbsp brown sugar
  • 1/2 cup balsamic vinegar
  • 1/2 cup white wine
  • Fresh spinach for serving
  • Cooked wild rice for serving

Instructions:

  1. Heat your grill to medium-high heat.
  2. In a saucepan, combine lemon juice, brown sugar, balsamic vinegar, and white wine. Bring the mixture to a boil over medium heat. Reduce heat to low and let it simmer for about 15 minutes until it thickens slightly.
  3. Brush each salmon fillet with olive oil. Sprinkle salt and pepper over both sides of the fillets.
  4. Place salmon fillets on the preheated grill. Grill for approximately 5 minutes on each side or until cooked through and flaky.
  5. Drizzle the prepared glaze over grilled salmon before serving. Serve on a bed of fresh spinach alongside fluffy wild rice.
