Ingredients:
- 4 salmon fillets
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 tbsp lemon juice
- 2 tbsp brown sugar
- 1/2 cup balsamic vinegar
- 1/2 cup white wine
- Fresh spinach for serving
- Cooked wild rice for serving
Instructions:
- Heat your grill to medium-high heat.
- In a saucepan, combine lemon juice, brown sugar, balsamic vinegar, and white wine. Bring the mixture to a boil over medium heat. Reduce heat to low and let it simmer for about 15 minutes until it thickens slightly.
- Brush each salmon fillet with olive oil. Sprinkle salt and pepper over both sides of the fillets.
- Place salmon fillets on the preheated grill. Grill for approximately 5 minutes on each side or until cooked through and flaky.
- Drizzle the prepared glaze over grilled salmon before serving. Serve on a bed of fresh spinach alongside fluffy wild rice.
