Ingredients:

  • 4 (6-ounce) salmon fillets, skin-on preferred
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 tablespoon olive oil for spinach
  • 4 cloves garlic, minced
  • 8 cups fresh spinach
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Instructions:

  1. Rub salmon fillets with olive oil, garlic powder, smoked paprika, salt, and pepper. Let marinate for 10 minutes while preparing the spinach.
  2. Heat the grill to medium-high heat (approximately 375°F to 400°F / 190°C to 200°C).
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add fresh spinach, stirring until wilted (about 2-3 minutes). Drizzle with lemon juice, season with salt and pepper, and set aside.
  4. Place salmon fillets skin-side down on the grill. Grill for 4-6 minutes per side, flipping carefully with tongs. Cook until the salmon flakes easily (internal temperature reaches 125°F to 130°F / 52°C to 54°C for medium-rare).
  5. Serve grilled salmon over a bed of garlic spinach.
