Ingredients:

  • 1 pound (450g) large prawns, peeled and deveined
  • 3 tablespoons (45ml) olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon (15ml) lemon juice
  • 1 tablespoon (15ml) fresh parsley, chopped
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 cups (300g) broccoli florets
  • 1 cup (150g) carrots, sliced
  • 1 cup (150g) bell peppers, sliced (mixed colors)
  • 2 tablespoons (30ml) olive oil
  • Salt, to taste

Instructions:

  1. In a mixing bowl, combine olive oil, minced garlic, lemon juice, parsley, smoked paprika, salt, and pepper.
  2. Add the prawns to the marinade, ensuring they are well-coated. Cover and refrigerate for 30 minutes.
  3. While the prawns marinate, wash and chop the vegetables accordingly.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Fill a pot with water (just below the steamer basket), bring it to a boil, and add the prepared vegetables. Steam for about 5–7 minutes until tender-crisp. Drizzle with olive oil and sprinkle with salt before serving.
  6. Thread marinated prawns onto skewers and grill for 2–3 minutes on each side until they become opaque and have grill marks.
  7. Arrange the grilled prawns on a platter alongside the steamed vegetables. Enjoy!
