Ingredients:
- 1 pound (450g) large prawns, peeled and deveined
- 3 tablespoons (45ml) olive oil
- 2 cloves garlic, minced
- 1 tablespoon (15ml) lemon juice
- 1 tablespoon (15ml) fresh parsley, chopped
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
- 2 cups (300g) broccoli florets
- 1 cup (150g) carrots, sliced
- 1 cup (150g) bell peppers, sliced (mixed colors)
- 2 tablespoons (30ml) olive oil
- Salt, to taste
Instructions:
- In a mixing bowl, combine olive oil, minced garlic, lemon juice, parsley, smoked paprika, salt, and pepper.
- Add the prawns to the marinade, ensuring they are well-coated. Cover and refrigerate for 30 minutes.
- While the prawns marinate, wash and chop the vegetables accordingly.
- Preheat your grill or grill pan over medium-high heat.
- Fill a pot with water (just below the steamer basket), bring it to a boil, and add the prepared vegetables. Steam for about 5–7 minutes until tender-crisp. Drizzle with olive oil and sprinkle with salt before serving.
- Thread marinated prawns onto skewers and grill for 2–3 minutes on each side until they become opaque and have grill marks.
- Arrange the grilled prawns on a platter alongside the steamed vegetables. Enjoy!
