Ingredients:

  • 1/4 cup (60 ml) olive oil
  • 2 tbsp (30 ml) fresh lime juice
  • 2 tbsp (30 ml) fresh orange juice
  • 2 cloves garlic, minced
  • 1 tsp (5 g) honey
  • 1/2 tsp (2 g) sea salt
  • 1/2 tsp (2 g) freshly ground black pepper
  • 1 tsp (2 g) smoked paprika
  • 1/4 tsp (1 g) cayenne pepper (optional)
  • 4 (6 oz or 170 g) mahi mahi fillets, skin removed
  • Fresh cilantro or parsley, for garnish
  • Lemon wedges, for serving

Instructions:

  1. In a mixing bowl, whisk together olive oil, lime juice, orange juice, minced garlic, honey, salt, pepper, smoked paprika, and cayenne pepper.
  2. Place the mahi mahi fillets in a Ziploc bag or a covered container and pour the marinade over the fish, ensuring they're well coated. Seal the bag/container and refrigerate for 30 minutes.
  3. Preheat your grill to medium-high heat (about 375°F or 190°C).
  4. Remove the mahi mahi from the marinade, allowing excess to drip off. Place the fillets on the grill and cook for about 4-5 minutes on each side or until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork.
  5. Remove from grill, garnish with fresh cilantro or parsley, and serve with lemon wedges.
