Ingredients:

  • 2 lobster tails (6-8 ounces each)
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup (1 stick, 113g) unsalted butter, softened
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • Pinch of salt
  • Pinch of black pepper

Instructions:

  1. Combine softened butter, garlic, herbs, lemon zest, lemon juice, red pepper flakes (if using), salt, and pepper in a bowl. Mix until well combined. Cover and chill in the refrigerator.
  2. Use kitchen shears or a sharp knife to cut lengthwise down the center of the top shell of each lobster tail, stopping just before the tail fin. Gently spread the shell open slightly.
  3. Brush the lobster meat with olive oil, then season with salt and pepper.
  4. Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).
  5. Place the lobster tails shell-side down on the preheated grill. Grill for 5-7 minutes, or until the shells turn bright red and the meat is opaque. Flip the tails and grill for another 3-5 minutes, or until the internal temperature reaches 135-140°F (57-60°C).
  6. During the last minute of grilling, top each lobster tail with a generous amount of the chilled garlic herb butter.
