Ingredients:
- 2 lobster tails (6-8 ounces each)
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 cup (1 stick, 113g) unsalted butter, softened
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
- 1 tablespoon fresh thyme leaves
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1/4 teaspoon red pepper flakes (optional)
- Pinch of salt
- Pinch of black pepper
Instructions:
- Combine softened butter, garlic, herbs, lemon zest, lemon juice, red pepper flakes (if using), salt, and pepper in a bowl. Mix until well combined. Cover and chill in the refrigerator.
- Use kitchen shears or a sharp knife to cut lengthwise down the center of the top shell of each lobster tail, stopping just before the tail fin. Gently spread the shell open slightly.
- Brush the lobster meat with olive oil, then season with salt and pepper.
- Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).
- Place the lobster tails shell-side down on the preheated grill. Grill for 5-7 minutes, or until the shells turn bright red and the meat is opaque. Flip the tails and grill for another 3-5 minutes, or until the internal temperature reaches 135-140°F (57-60°C).
- During the last minute of grilling, top each lobster tail with a generous amount of the chilled garlic herb butter.
