Ingredients:

  • 2 live hard-shell lobsters, approx. 1.5 lbs each
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 4 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh lemon juice
  • 1/4 tsp paprika

Instructions:

  1. Using heavy-duty shears, cut the lobster in half lengthwise from the head through the tail.
  2. Remove the sandy digestive tract (the vein) from the tail and discard any gills.
  3. Brush the outer shells with olive oil to prevent sticking. Lightly season the exposed meat with salt and black pepper.
  4. In a small bowl, whisk together melted butter, minced garlic, parsley, lemon juice, and paprika until emulsified.
  5. Preheat your grill to medium-high heat (approx. 400°F / 200°C).
  6. Place the lobster halves meat-side down on the grates. Sear for 3–4 minutes without moving them to develop a deep, charred crust.
  7. Carefully flip the lobster over so the shell is touching the grill.
  8. While the lobster is shell-side down, generously brush the garlic-herb butter over the meat.
  9. Close the grill lid for 5–7 minutes until the internal temperature reaches peak tenderness.
