Ingredients:
- 4 (6 oz / 170g) tuna steaks, approx 1-inch thick
- 1 tsp (5g) coarse sea salt
- ½ tsp (2g) cracked black pepper
- 3 tbsp (45ml) extra virgin olive oil
- 2 tbsp (30ml) fresh lemon juice
- 1 tbsp (6g) lemon zest, finely grated
- 1 tbsp (8g) lemon pepper seasoning
- 2 cloves (6g) garlic, minced
Instructions:
- Pat the tuna steaks completely dry with paper towels to ensure a proper sear.
- In a small bowl, whisk together the olive oil, lemon juice, zest, lemon pepper seasoning, minced garlic, coarse sea salt, and cracked black pepper.
- Place the steaks in a mixing bowl, pour the marinade over them, toss gently to coat, and let sit at room temperature for 10–15 minutes.
- Preheat your grill or grill pan to high heat until shimmering or slightly smoking.
- Place the tuna steaks on the grill, pressing down slightly with tongs for contact.
- Grill for 3–4 minutes per side for medium-rare until a mahogany-colored char forms and the center remains warm pink.
- Transfer the steaks to a plate and let rest for 5 minutes before serving.
