Ingredients:

  • 1/4 cup (60ml) olive oil
  • 2 tablespoons freshly squeezed lemon juice (about 1 lemon)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 sea bass fillets (6 oz / 170g each)
  • 1/4 cup (60g) unsalted butter
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh parsley
  • Squeeze of lemon juice (to taste)

Instructions:

  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
  2. Place sea bass fillets in a dish, pour the marinade over them, and ensure they are well coated. Cover and refrigerate for 30 minutes.
  3. Heat the grill to medium-high (about 375-400°F / 190-200°C).
  4. Lightly oil the grill grates or use a grill basket. Place sea bass on the grill skin-side down. Cook for 5-6 minutes without moving, until the skin is crisp and the fish starts to flake.
  5. Carefully flip the fillets and grill for an additional 3-4 minutes, or until cooked through.
  6. In a small saucepan over low heat, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant. Remove from heat, stir in parsley and lemon juice.
  7. Plate the grilled sea bass and drizzle with garlic butter sauce. Enjoy!
