Ingredients:
- 1/4 cup (60ml) olive oil
- 2 tablespoons freshly squeezed lemon juice (about 1 lemon)
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 sea bass fillets (6 oz / 170g each)
- 1/4 cup (60g) unsalted butter
- 1 clove garlic, minced
- 1 tablespoon chopped fresh parsley
- Squeeze of lemon juice (to taste)
Instructions:
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
- Place sea bass fillets in a dish, pour the marinade over them, and ensure they are well coated. Cover and refrigerate for 30 minutes.
- Heat the grill to medium-high (about 375-400°F / 190-200°C).
- Lightly oil the grill grates or use a grill basket. Place sea bass on the grill skin-side down. Cook for 5-6 minutes without moving, until the skin is crisp and the fish starts to flake.
- Carefully flip the fillets and grill for an additional 3-4 minutes, or until cooked through.
- In a small saucepan over low heat, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant. Remove from heat, stir in parsley and lemon juice.
- Plate the grilled sea bass and drizzle with garlic butter sauce. Enjoy!
