Ingredients:
- 4 halibut fillets (6 ounces / 170 grams each)
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- Zest of 1 lemon
- Juice of 2 lemons
- ½ cup fresh parsley, chopped
- ¼ cup fresh basil, chopped
- 1 clove garlic, minced
- 1 tablespoon capers, rinsed and chopped
- Salt and pepper to taste
Instructions:
- Preheat the grill to medium-high heat (about 400°F / 200°C).
- In a mixing bowl, combine olive oil, sea salt, and black pepper.
- Brush the halibut fillets with the olive oil mixture on both sides.
- In a separate bowl, combine lemon zest, lemon juice, parsley, basil, garlic, and capers. Season with salt and pepper to taste. Mix well.
- Place halibut fillets on the grill and cook for about 4-5 minutes on each side.
- Check for doneness (the fish should flake easily with a fork and be opaque in the center).
- Remove from grill and plate. Top with lemon herb salsa and serve.
