Ingredients:

  • 4 halibut fillets (6 ounces / 170 grams each)
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • Zest of 1 lemon
  • Juice of 2 lemons
  • ½ cup fresh parsley, chopped
  • ¼ cup fresh basil, chopped
  • 1 clove garlic, minced
  • 1 tablespoon capers, rinsed and chopped
  • Salt and pepper to taste

Instructions:

  1. Preheat the grill to medium-high heat (about 400°F / 200°C).
  2. In a mixing bowl, combine olive oil, sea salt, and black pepper.
  3. Brush the halibut fillets with the olive oil mixture on both sides.
  4. In a separate bowl, combine lemon zest, lemon juice, parsley, basil, garlic, and capers. Season with salt and pepper to taste. Mix well.
  5. Place halibut fillets on the grill and cook for about 4-5 minutes on each side.
  6. Check for doneness (the fish should flake easily with a fork and be opaque in the center).
  7. Remove from grill and plate. Top with lemon herb salsa and serve.
