Ingredients:

  • 4 Cod fillets (approx. 6 oz / 170g each)
  • 1.5 tsp Sea salt
  • 1 tsp Freshly cracked black pepper
  • 2 tbsp Avocado oil
  • 3 tbsp Extra virgin olive oil
  • 2 cloves Garlic, microplaned or finely minced
  • 1 tbsp Fresh lemon zest
  • 1 tbsp Fresh parsley, finely chopped
  • 1 tsp Fresh thyme leaves
  • 0.5 tsp Red pepper flakes
  • 1 Lemon, cut into thick rounds

Instructions:

  1. Pat the cod fillets bone-dry with paper towels to ensure a good sear.
  2. Season all sides generously with 1.5 tsp sea salt and let them sit at room temperature for 15 minutes to brine.
  3. In a small mixing bowl, whisk together the extra virgin olive oil, minced garlic, lemon zest, chopped parsley, thyme leaves, and red pepper flakes until well combined.
  4. Preheat your outdoor grill (gas or charcoal) to medium-high heat. Use a grill brush to ensure the surface is clean.
  5. Brush the cod fillets with avocado oil and place on the grill. Grill until the edges are opaque and the fish releases easily, approximately 5 minutes.
  6. Carefully flip the fillets using a fish spatula. Grill for another 3-5 minutes.
  7. During the final 2 minutes of cooking, brush the lemon-herb infusion onto the fillets and grill the lemon rounds until charred.
