Ingredients:
- 4 Cod fillets (approx. 6 oz / 170g each)
- 1.5 tsp Sea salt
- 1 tsp Freshly cracked black pepper
- 2 tbsp Avocado oil
- 3 tbsp Extra virgin olive oil
- 2 cloves Garlic, microplaned or finely minced
- 1 tbsp Fresh lemon zest
- 1 tbsp Fresh parsley, finely chopped
- 1 tsp Fresh thyme leaves
- 0.5 tsp Red pepper flakes
- 1 Lemon, cut into thick rounds
Instructions:
- Pat the cod fillets bone-dry with paper towels to ensure a good sear.
- Season all sides generously with 1.5 tsp sea salt and let them sit at room temperature for 15 minutes to brine.
- In a small mixing bowl, whisk together the extra virgin olive oil, minced garlic, lemon zest, chopped parsley, thyme leaves, and red pepper flakes until well combined.
- Preheat your outdoor grill (gas or charcoal) to medium-high heat. Use a grill brush to ensure the surface is clean.
- Brush the cod fillets with avocado oil and place on the grill. Grill until the edges are opaque and the fish releases easily, approximately 5 minutes.
- Carefully flip the fillets using a fish spatula. Grill for another 3-5 minutes.
- During the final 2 minutes of cooking, brush the lemon-herb infusion onto the fillets and grill the lemon rounds until charred.
