Ingredients:

  • 1 lb Cod fillets
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 2 tbsp unsalted butter, melted
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, finely chopped

Instructions:

  1. Use paper towels to pat the cod fillets completely dry to ensure a proper sear.
  2. In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
  3. Brush the marinade generously over all sides of the fish and let it sit for 5 minutes while the grill heats.
  4. Preheat the grill to medium-high heat (approximately 400°F / 200°C) and oil the grates using a paper towel and tongs.
  5. Place fillets on the grill and cook undisturbed for 4–5 minutes until they release easily from the grate.
  6. Carefully flip the fillets and cook for another 3–4 minutes until the fish is opaque and flakes easily.
  7. During the final minute of cooking, brush the melted butter, lemon zest, and chopped parsley over the top of the fillets.
  8. Remove from heat immediately and let the fish rest for 2 minutes to allow juices to redistribute.
