Ingredients:
- 1 lb Cod fillets
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 2 tbsp unsalted butter, melted
- 1 tsp lemon zest
- 1 tbsp fresh parsley, finely chopped
Instructions:
- Use paper towels to pat the cod fillets completely dry to ensure a proper sear.
- In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
- Brush the marinade generously over all sides of the fish and let it sit for 5 minutes while the grill heats.
- Preheat the grill to medium-high heat (approximately 400°F / 200°C) and oil the grates using a paper towel and tongs.
- Place fillets on the grill and cook undisturbed for 4–5 minutes until they release easily from the grate.
- Carefully flip the fillets and cook for another 3–4 minutes until the fish is opaque and flakes easily.
- During the final minute of cooking, brush the melted butter, lemon zest, and chopped parsley over the top of the fillets.
- Remove from heat immediately and let the fish rest for 2 minutes to allow juices to redistribute.
