Ingredients:

  • 4 slices bacon, cut into 1/2-inch pieces (Approximately 100g)
  • 1 medium yellow onion, thinly sliced (Approximately 150g)
  • 1 medium head green cabbage (approx. 2 lbs), cored and thinly sliced (Approximately 900g)
  • 2 tablespoons apple cider vinegar (30 ml)
  • 1 teaspoon granulated sugar (5g)
  • 1/2 teaspoon black pepper (2.5g)
  • Salt to taste
  • 2 tablespoons butter, unsalted (30g) (Optional)

Instructions:

  1. Fry bacon in the skillet over medium heat until crispy. Remove bacon with a slotted spoon and set aside, reserving bacon grease in the skillet.
  2. Add sliced onion to the skillet with the bacon grease and butter (if using). Sauté until softened and translucent, about 5-7 minutes.
  3. Add the sliced cabbage to the skillet. Stir to coat with the bacon grease and onions.
  4. Add apple cider vinegar, sugar, and pepper. Stir to combine.
  5. Cook the cabbage over medium heat, stirring occasionally, until it begins to soften and brown, about 15-20 minutes. Reduce heat if it starts to burn.
  6. Increase the heat slightly and continue cooking, stirring less frequently, allowing the cabbage to caramelize and develop crispy edges.
  7. Stir in the cooked bacon. Season with salt to taste. Serve hot.
