Ingredients:
- 4 slices bacon, cut into 1/2-inch pieces (Approximately 100g)
- 1 medium yellow onion, thinly sliced (Approximately 150g)
- 1 medium head green cabbage (approx. 2 lbs), cored and thinly sliced (Approximately 900g)
- 2 tablespoons apple cider vinegar (30 ml)
- 1 teaspoon granulated sugar (5g)
- 1/2 teaspoon black pepper (2.5g)
- Salt to taste
- 2 tablespoons butter, unsalted (30g) (Optional)
Instructions:
- Fry bacon in the skillet over medium heat until crispy. Remove bacon with a slotted spoon and set aside, reserving bacon grease in the skillet.
- Add sliced onion to the skillet with the bacon grease and butter (if using). Sauté until softened and translucent, about 5-7 minutes.
- Add the sliced cabbage to the skillet. Stir to coat with the bacon grease and onions.
- Add apple cider vinegar, sugar, and pepper. Stir to combine.
- Cook the cabbage over medium heat, stirring occasionally, until it begins to soften and brown, about 15-20 minutes. Reduce heat if it starts to burn.
- Increase the heat slightly and continue cooking, stirring less frequently, allowing the cabbage to caramelize and develop crispy edges.
- Stir in the cooked bacon. Season with salt to taste. Serve hot.
