Ingredients:
- 1 large head cauliflower (approx. 2 lbs / 900g), cut into florets
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- ½ cup grated Parmesan cheese (approx. 50g)
- 1 tablespoon lemon zest
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons chopped fresh parsley, for garnish
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper (optional).
- Cut the cauliflower into even-sized florets.
- In a large bowl, combine olive oil, minced garlic, Parmesan cheese, lemon zest, oregano, salt, and pepper.
- Add the cauliflower florets to the bowl and toss to coat thoroughly with the garlic-Parmesan mixture. Ensure all florets are well-coated.
- Spread the cauliflower florets in a single layer on the prepared baking sheet. Avoid overcrowding.
- Bake for 25-30 minutes, or until the cauliflower is tender and golden brown, flipping halfway through for even browning.
- Remove from oven and sprinkle with fresh parsley. Serve immediately.
