Ingredients:

  • 1 large head cauliflower (approx. 2 lbs / 900g), cut into florets
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese (approx. 50g)
  • 1 tablespoon lemon zest
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper (optional).
  2. Cut the cauliflower into even-sized florets.
  3. In a large bowl, combine olive oil, minced garlic, Parmesan cheese, lemon zest, oregano, salt, and pepper.
  4. Add the cauliflower florets to the bowl and toss to coat thoroughly with the garlic-Parmesan mixture. Ensure all florets are well-coated.
  5. Spread the cauliflower florets in a single layer on the prepared baking sheet. Avoid overcrowding.
  6. Bake for 25-30 minutes, or until the cauliflower is tender and golden brown, flipping halfway through for even browning.
  7. Remove from oven and sprinkle with fresh parsley. Serve immediately.
