Ingredients:

  • 1 cup (240 ml) unsweetened coconut milk
  • ¼ cup (50 g) granulated sugar
  • 2 teaspoons (10 ml) agar-agar powder
  • 1 teaspoon (5 ml) vanilla extract
  • A pinch of sea salt
  • 2-3 drops of blue food coloring
  • Edible glitter or shimmer dust (optional)

Instructions:

  1. In a medium saucepan, combine coconut milk, sugar, and sea salt. Whisk together until smooth.
  2. Sprinkle agar-agar powder into the mixture, whisking continuously to avoid lumps.
  3. Place the saucepan over medium heat. Stir until the mixture comes to a gentle boil, continuing to whisk for 1-2 minutes.
  4. Remove from heat and stir in vanilla extract and blue food coloring until well combined.
  5. Quickly pour the mixture into the silicone molds, filling each mold evenly.
  6. Place the molds in the refrigerator and let them set for at least 20 minutes or until firm.
  7. Carefully remove the sea lanterns from the molds and place them on a serving platter. Dust with edible glitter if desired.
