Ingredients:

  • 4 (6-8 ounce/170-225g) cod fillets, skinless or skin-on
  • 1 tablespoon/15ml olive oil, or vegetable oil
  • Pinch of salt
  • Pinch of black pepper
  • 1/4 cup/60ml low-sodium soy sauce
  • 2 tablespoons/30ml rice vinegar (unseasoned)
  • 2 tablespoons/30ml honey (or maple syrup)
  • 1 tablespoon/15ml grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon cornstarch (cornflour), dissolved in 1 tablespoon/15ml cold water
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon sesame seeds
  • 2 green onions (scallions), thinly sliced

Instructions:

  1. In a small saucepan or microwave-safe bowl, whisk together soy sauce, rice vinegar, honey (or maple syrup), grated ginger, minced garlic, and sesame oil.
  2. Heat the glaze on medium heat until simmering. Whisk in the cornstarch slurry and cook until the glaze thickens slightly, about 1-2 minutes. Remove from heat and set aside.
  3. Preheat oven to 400°F/200°C/Gas Mark 6. Lightly grease a baking dish with olive oil.
  4. Place the cod fillets in the prepared baking dish. Season with salt and pepper.
  5. Brush the ginger soy glaze generously over the cod fillets, ensuring they are well coated.
  6. Bake for 12-15 minutes, or until the cod is opaque and flakes easily with a fork. The internal temperature should reach 145°F/63°C. Adjust baking time as needed.
  7. Sprinkle with sesame seeds and sliced green onions. Serve immediately. This Ginger Soy Glazed Cod Recipe delivers flaky perfection!
