Ingredients:
- 1 pound (450g) large shrimp, peeled and deveined
- 2 tablespoons (30ml) olive oil
- 4 cloves garlic, minced
- 1/4 cup (25g) grated Parmesan cheese, freshly grated
- 2 tablespoons (15g) chopped fresh parsley
- 1 teaspoon (5ml) lemon juice
- 1/2 teaspoon (2.5ml) dried oregano
- 1/4 teaspoon (1.25ml) red pepper flakes (optional)
- Salt and black pepper to taste
Instructions:
- Preheat oven to 400°F (200°C).
- In a large bowl, combine the shrimp, olive oil, minced garlic, Parmesan cheese, parsley, lemon juice, oregano, red pepper flakes (if using), salt, and pepper. Toss well.
- Spread the shrimp in a single layer on a baking sheet.
- Roast for 12-15 minutes, or until the shrimp are pink and opaque and the parmesan is golden brown.
- Serve hot, garnished with extra parsley and a squeeze of fresh lemon juice, if desired.
