Ingredients:
- 1 pound (450g) large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1/4 cup (60ml) olive oil
- 1/4 cup (25g) grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 teaspoon dried Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 2 tablespoons chopped fresh parsley, for garnish
Instructions:
- Preheat oven to 400°F (200°C).
- Pat the shrimp dry with paper towels.
- In a small bowl, whisk together olive oil, minced garlic, Parmesan cheese, lemon juice, Italian seasoning, and red pepper flakes (if using).
- Place the shrimp in a single layer on the baking sheet. Drizzle the garlic parmesan sauce evenly over the shrimp. Toss to coat.
- Season with salt and pepper to taste.
- Roast for 8-10 minutes, or until the shrimp are pink and opaque, and the sauce is bubbly.
- Sprinkle with fresh parsley and extra Parmesan cheese. Serve immediately.
