Ingredients:

  • 1 pound (450g) large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/4 cup (60ml) olive oil
  • 1/4 cup (25g) grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Pat the shrimp dry with paper towels.
  3. In a small bowl, whisk together olive oil, minced garlic, Parmesan cheese, lemon juice, Italian seasoning, and red pepper flakes (if using).
  4. Place the shrimp in a single layer on the baking sheet. Drizzle the garlic parmesan sauce evenly over the shrimp. Toss to coat.
  5. Season with salt and pepper to taste.
  6. Roast for 8-10 minutes, or until the shrimp are pink and opaque, and the sauce is bubbly.
  7. Sprinkle with fresh parsley and extra Parmesan cheese. Serve immediately.
