Ingredients:

  • 1 pound fresh green beans, trimmed
  • 3 Tablespoons extra virgin olive oil
  • 4 cloves fresh garlic, minced finely
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup freshly grated Parmesan cheese

Instructions:

  1. Preheat oven to 400°F (200°C). Line the baking sheet(s) with parchment paper.
  2. Rinse and thoroughly dry the green beans. Trim off the tough stem ends. Ensure beans are completely dry to promote roasting, not steaming.
  3. In a large bowl, combine the dried green beans, olive oil, minced garlic, Kosher salt, and black pepper. Toss well until every bean is lightly coated.
  4. Spread the seasoned beans out onto the prepared baking sheet(s) in a single layer. Avoid overcrowding to ensure crisping.
  5. Place the baking sheet(s) in the preheated oven and roast for 15 minutes.
  6. Carefully remove the tray and shake or toss the beans to ensure even browning. Return to the oven for another 3–5 minutes, or until the beans are tender-crisp and slightly blistered at the edges.
  7. Remove from the oven immediately. Transfer the hot beans to a serving platter or bowl and sprinkle generously with the freshly grated Parmesan cheese. Toss quickly to coat slightly before serving warm.
