Ingredients:
- 1 pound fresh green beans, trimmed
- 3 Tablespoons extra virgin olive oil
- 4 cloves fresh garlic, minced finely
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup freshly grated Parmesan cheese
Instructions:
- Preheat oven to 400°F (200°C). Line the baking sheet(s) with parchment paper.
- Rinse and thoroughly dry the green beans. Trim off the tough stem ends. Ensure beans are completely dry to promote roasting, not steaming.
- In a large bowl, combine the dried green beans, olive oil, minced garlic, Kosher salt, and black pepper. Toss well until every bean is lightly coated.
- Spread the seasoned beans out onto the prepared baking sheet(s) in a single layer. Avoid overcrowding to ensure crisping.
- Place the baking sheet(s) in the preheated oven and roast for 15 minutes.
- Carefully remove the tray and shake or toss the beans to ensure even browning. Return to the oven for another 3–5 minutes, or until the beans are tender-crisp and slightly blistered at the edges.
- Remove from the oven immediately. Transfer the hot beans to a serving platter or bowl and sprinkle generously with the freshly grated Parmesan cheese. Toss quickly to coat slightly before serving warm.
