Ingredients:
- 4 flounder fillets (approx. 1 lb)
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 4 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tbsp fresh parsley, finely chopped
- 1/4 cup grated parmesan cheese
- 1/4 cup panko breadcrumbs
- 1/2 tsp dried thyme
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the flounder fillets completely dry with paper towels and season lightly with salt and pepper.
- In a small bowl, whisk together the melted butter, minced garlic, lemon juice, and parsley. Brush a generous layer of this mixture over the top of each fillet.
- In a separate small bowl, mix the grated parmesan, panko breadcrumbs, and dried thyme. Press the mixture firmly onto the buttered fish to create a sealed crust.
- Bake for 8–12 minutes until the fish is opaque and the parmesan crust is golden-brown.
