Ingredients:

  • thick cut, skinless Cod Fillets (about 6 oz each)
  • teaspoon Salt
  • /2 teaspoon Black Pepper
  • tablespoon Fresh Lemon Juice
  • tablespoons Unsalted Butter, softened
  • cloves Fresh Garlic, finely minced
  • tablespoons Fresh Parsley, finely chopped
  • teaspoon Fresh Thyme Leaves
  • teaspoon Lemon Zest

Instructions:

  1. Preheat oven to 400°F (200°C). Lightly grease an 8x8 or 9x13 inch baking dish.
  2. Prepare Herb Butter: In a small bowl, cream together the softened butter, minced garlic, parsley, thyme, and lemon zest until well combined and fluffy.
  3. Season Fish: Pat the cod fillets very dry with paper towels. Arrange them in the prepared baking dish. Season evenly with salt, pepper, and drizzle the fresh lemon juice over the top.
  4. Apply Topping: Generously spoon or spread the herb butter mixture evenly over the top of each cod fillet.
  5. Bake: Place the dish in the preheated oven. Bake for 12–15 minutes. The fish is done when it flakes easily with a fork or the internal temperature reaches 145°F (63°C).
  6. Rest & Serve: Remove from the oven. Let rest for 2 minutes before serving immediately with the pan juices spooned over the top.
