Ingredients:
- thick cut, skinless Cod Fillets (about 6 oz each)
- teaspoon Salt
- /2 teaspoon Black Pepper
- tablespoon Fresh Lemon Juice
- tablespoons Unsalted Butter, softened
- cloves Fresh Garlic, finely minced
- tablespoons Fresh Parsley, finely chopped
- teaspoon Fresh Thyme Leaves
- teaspoon Lemon Zest
Instructions:
- Preheat oven to 400°F (200°C). Lightly grease an 8x8 or 9x13 inch baking dish.
- Prepare Herb Butter: In a small bowl, cream together the softened butter, minced garlic, parsley, thyme, and lemon zest until well combined and fluffy.
- Season Fish: Pat the cod fillets very dry with paper towels. Arrange them in the prepared baking dish. Season evenly with salt, pepper, and drizzle the fresh lemon juice over the top.
- Apply Topping: Generously spoon or spread the herb butter mixture evenly over the top of each cod fillet.
- Bake: Place the dish in the preheated oven. Bake for 12–15 minutes. The fish is done when it flakes easily with a fork or the internal temperature reaches 145°F (63°C).
- Rest & Serve: Remove from the oven. Let rest for 2 minutes before serving immediately with the pan juices spooned over the top.
