Ingredients:
- 4 Tilapia fillets (approx. 1.25 lbs / 560g)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika
- 1 tbsp olive oil
- 4 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1 tbsp fresh parsley, chopped
Instructions:
- Pat each tilapia fillet bone dry using paper towels. Note: Excess water is the enemy of a good sear.
- In a small bowl, combine salt, pepper, and paprika.
- Dust both sides of the fillets evenly with the seasoning mix.
- Heat olive oil in a skillet over medium high heat until it shimmers.
- Carefully lay the fillets in the pan.
- Sear for 3–4 minutes per side without moving them until the edges are deep gold.
- Reduce heat to medium.
- Slide the fillets to the side and add the butter.
- Once bubbling, stir in the minced garlic for 30–60 seconds until it smells fragrant but hasn't browned.
- Stir in the lemon juice to emulsify the sauce.
- Spoon the garlic butter over the fillets for 1 minute.
- Remove from heat immediately and garnish with chopped fresh parsley.
