Ingredients:

  • 4 Tilapia fillets (approx. 1.25 lbs / 560g)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Pat each tilapia fillet bone dry using paper towels. Note: Excess water is the enemy of a good sear.
  2. In a small bowl, combine salt, pepper, and paprika.
  3. Dust both sides of the fillets evenly with the seasoning mix.
  4. Heat olive oil in a skillet over medium high heat until it shimmers.
  5. Carefully lay the fillets in the pan.
  6. Sear for 3–4 minutes per side without moving them until the edges are deep gold.
  7. Reduce heat to medium.
  8. Slide the fillets to the side and add the butter.
  9. Once bubbling, stir in the minced garlic for 30–60 seconds until it smells fragrant but hasn't browned.
  10. Stir in the lemon juice to emulsify the sauce.
  11. Spoon the garlic butter over the fillets for 1 minute.
  12. Remove from heat immediately and garnish with chopped fresh parsley.
