Ingredients:

  • 12 oz (340g) Spaghetti or Linguine
  • 2 cups (150g) Broccoli florets, bite-sized
  • 1 medium (150g) Zucchini, diced
  • 1 cup (150g) Red bell pepper, sliced thin
  • 1 tbsp (15ml) Olive oil
  • 1 lb (450g) Medium raw shrimp, peeled and deveined
  • 6 tbsp (85g) Unsalted butter, divided
  • 5 cloves (25g) Garlic, minced
  • ½ tsp (3g) Crushed red pepper flakes
  • 1 tbsp (15ml) Fresh lemon juice
  • ½ tsp (3g) Kosher salt
  • ¼ cup (10g) Fresh parsley, chopped
  • ¼ cup (20g) Grated Parmesan cheese

Instructions:

  1. Bring a large pot of salted water to a boil and cook pasta according to package directions.
  2. Heat 2 tbsp (28g) of butter and 1 tbsp (15ml) of olive oil in a large skillet over medium-high heat.
  3. Add patted-dry shrimp in a single layer and sear for 2 minutes per side until opaque and pink; transfer shrimp to a plate immediately to prevent overcooking.
  4. In the same skillet, add another 2 tbsp (28g) of butter and sauté broccoli, zucchini, and red bell pepper for 4–5 minutes until edges are slightly browned.
  5. Stir in the minced garlic and red pepper flakes, cooking for 1 minute until fragrant.
  6. Add the remaining 2 tbsp of butter and lemon juice to the pan, then toss in the cooked pasta and seared shrimp.
  7. Stir in fresh parsley and grated Parmesan cheese, adding a splash of starchy pasta water if needed to create a glossy emulsion.
