Ingredients:
- 12 oz (340g) Spaghetti or Linguine
- 2 cups (150g) Broccoli florets, bite-sized
- 1 medium (150g) Zucchini, diced
- 1 cup (150g) Red bell pepper, sliced thin
- 1 tbsp (15ml) Olive oil
- 1 lb (450g) Medium raw shrimp, peeled and deveined
- 6 tbsp (85g) Unsalted butter, divided
- 5 cloves (25g) Garlic, minced
- ½ tsp (3g) Crushed red pepper flakes
- 1 tbsp (15ml) Fresh lemon juice
- ½ tsp (3g) Kosher salt
- ¼ cup (10g) Fresh parsley, chopped
- ¼ cup (20g) Grated Parmesan cheese
Instructions:
- Bring a large pot of salted water to a boil and cook pasta according to package directions.
- Heat 2 tbsp (28g) of butter and 1 tbsp (15ml) of olive oil in a large skillet over medium-high heat.
- Add patted-dry shrimp in a single layer and sear for 2 minutes per side until opaque and pink; transfer shrimp to a plate immediately to prevent overcooking.
- In the same skillet, add another 2 tbsp (28g) of butter and sauté broccoli, zucchini, and red bell pepper for 4–5 minutes until edges are slightly browned.
- Stir in the minced garlic and red pepper flakes, cooking for 1 minute until fragrant.
- Add the remaining 2 tbsp of butter and lemon juice to the pan, then toss in the cooked pasta and seared shrimp.
- Stir in fresh parsley and grated Parmesan cheese, adding a splash of starchy pasta water if needed to create a glossy emulsion.
